Why Cleaning?

During the roasting process, coffee beans undergo major physical and sensory changes, and a wide range of flavors occurs.

During this transformation, the lipids (oils) in the coffee bean rise to the surface. These lipids are an essential part of coffee powder and one of the main ingredients of espresso cream. However, they oxidize quickly.

During the initial extraction (dissolution), the lipids immediately penetrate the inner parts of the brew group and begin to form a layer. These lipids become carbonized (carbonization) as a result of the high temperature they are exposed to.
